Title: Taro Root and Garlic Chive Latka

1 | lb | Taro root |
2 | tb | Chopped garlic chives |
1 | tb | Chopped ginger |
1 | Egg white | |
1 | tb | Cornstarch |
2 | tb | Olive oil |
2 | tb | Salmon roe |
1 | tb | Sour cream |
16 | Chive points for garnish | |
Salt and pepper |
Peel taro root and grate over large holes of cheese grater.
In a mixing bowl place shredded taro root, garlic chives, ginger, egg white and cornstarch. Mix and season to taste with salt and pepper. In a large skillet over medium heat, heat the olive oil and sear 1 tablespoon of taro mix, flatten as a pancake. Coo k each side until golden brown.
Drain excess oil on a paper towel. Serve topped with salmon roe, sour cream and chive points.
Yield: 4 servings
