Title: Pasta-Crusted Salmon with Roasted Vegetables and Griddled

1 | c | Fresh linguine pasta -- |
Finely minced | ||
4 | Salmon fillets (8-ounce) -- | |
Trimmed of skin | ||
Salt to taste | ||
2 | tb | Olive oil |
Oven-roasted vegetables | ||
Griddled shallot croutons | ||
And bones |
Preheat oven to 350 degrees.
Use as many different flavors of linguine as possible.
Place minced pasta in a medium bowl. Season fillets with salt, then press one side of the fillets in pasta mixture, coating that side heavily, and set aside. Heat oil in a heavy ovenproof saute pan over medium heat. When hot, add fillets, pasta side down, and fry for 1 minute or until golden brown. Turn each fillet over. Place pan in oven (pasta side up) and cook for 5 minutes or until fish is cooked.
