Title: Easy Poached Salmon/basil

Yield: 4 Servings
BASIL/MAYONNAISE | ||
1/2 | c | Mayonnaise |
1/2 | c | Sour cream OR plain yogurt |
1 | Green onion cut into pieces | |
1 | tb | Fresh parsley |
2 | tb | Fresh basil |
ds | Salt to taste | |
ds | Pepper to taste | |
POACHED SALMON STEAKS | ||
4 | 1 1/2 inch thick Salmon steaks | |
1 | lg | Bay leaf |
4 | Peppercorns | |
Water |
To make the mayonnaise, combine all ingredients in a food processor or blender until well blended. Check for salt and pepper.
In a medium skillet, place the bay leaf, peppercorns and enough water to fill the skillet to a one inch depth. Bring water and spices to a boil. Add the salmon steaks.
Reduce the heat and cover the skillet. Simmer five minutes OR until salmon flakes easily when tested with fork.
Remove the salmon, serve with the Basil Mayonnaise on the side.
