Title: Salmon W/lime and Cilantro

Yield: 2 Servings
10 | oz | Salmon fillet |
Cilantro to yeild 2T chopped | ||
1 | tb | Lime juice |
1/4 | ts | Grated lime zest |
1/4 | lb | Kirby cucumbers (2 small) |
4 | tb | Nonfat yogurt |
2 | tb | Low fat sour cream |
1/2 | ts | Olive oil |
Vegetable oil spray |
Wash and dry the salmon. Wash and chop the cilantro and combine 1 T with the lime juice in a small pot. Add the salmon, and turn to coat on both sides,leaving the skin side up. Allow to marinate until it is time to cook.
Wash, trim and chope the unpeeled cucumbers into 1/2 inch chunks. In a serving bowl combine the yogurt, sour cream, oil and remaining cilantro, and mix well. Grate the lime zest, and add to bowl. Stir in the cucumbers.
Grill or broil salmon, starting skin side up, turning once, just until opaque. Serve with cucumber mixture on the side or on top.
