1 | | Salmon trout |
3 1/2 | fl | Olive oil |
8 | fl | White wine |
1/2 | | Onion; chopped |
1 | cl | Garlic |
5 | | Sage leaves |
2 | tb | Red wine vinegar |
1 | tb | Flour |
| | Salt |
Wash trout and season cavity with salt. Heat oil in nonstick pan. Add onion
and garlic and fry until onion is lightly browned. Add trout and fry on
both sides for 10 min until golden brown. Remove trout and set aside. Place
sage leaves in the pan and saute. In a little bowl, stir vinegar with wine
and blend in flour; pour into the frypan. Mix well and simmer 6-7 min.
Season with salt to taste and pass the sauce through a sieve. Bone the
trout and place on a plate. Pour on the sauce. For serving, garnish with
