Title: Oven Roasted Chilli Salmon on Spinach-Onion Fondue

Yield: 4 Servings
2 | lg | Red onions, sliced |
2 | c | Spinach, sliced |
4 | lg | Banana leaves, parchment |
Paper and/or aluminum | ||
Foil | ||
3 | c | Cooked jasmine rice |
8 | 3 oz pcs of salmon filet, | |
Sliced on the bias | ||
Chilli Paste | ||
1 | bn | Scallions, chopped |
Preheat the oven to 350 degrees. In a large saute pan, cook the onions until caramelized. Remove the pan from the heat and add the spinach. Taste for seasoning. Lay a banana leaf out and fold in half. Place a small mound of rice on the leaf and top with the vegetable mixture. Place a serving of salmon on top of vegetables and smother the paste over the salmon. Bake for 20 minutes. Garnish with the chopped scallions.
