Title: Skewers of Atlantic Salmon with Tarragon Mayonnaise

400 | g | Fillet of salmon all bones |
And skin removed | ||
1 | c | Light soya sauce |
l | Cup sake | |
1 | c | Sugar |
2 | tb | Lemon juice |
2 | Cucumbers, cut in 5mm slices | |
And each slice cut in half | ||
TARRAGON MAYONNAISE: | ||
1 | c | Homemade mayonnaise |
Finely chopped fresh | ||
Tarragon to taste |
To prepare the salmon: cut the salmon fillet into 2.5cm x 5mm thick cubes. Combine the soya sauce, sake, sugar and lemon juice in a bowl and mix until the sugar has dissolved. Add the salmon, toss to coat in the marinade, then cover and refrigerate for 2 to 3 hours. To make the mayonnaise: combine the mayonnaise with fresh tarragon to taste. Cover and refrigerate until ready to use. To cook the salmon: thread a cube of salmon onto each skewer. Pan fry or char grill the salmon skewers until the salmon is just cooked. Brush the salmon with the marinade while cooking. Thread cucumber halves onto skewers each side of the salmon. To serve: the salmon may be served hot or cold.
