Title: Oregon Salmon

Yield: 4 Servings
4 | sl | Bacon, halved |
2 | lb | Piece of fresh salmon |
1 | ts | Salt |
1/4 | ts | Pepper |
1 | Garlic clove, minced | |
1/2 | c | Chopped onion |
1/2 | c | Chopped green bell pepper |
2 | tb | Cooking oil |
1 1/2 | c | Canned tomatoes |
1 1/2 | ts | Worcestershire |
1/2 | Bay leaf, crumbled |
Place bacon in bottom of baking dish.
Sprinkle salmon with salt and pepper. Lay salmon on top of bacon.
Saute garlic, onion and bell pepper together for three minutes in the hot oil. Add remaining ingredients and simmer for five minutes. Pour over the salmon.
Bake in preheated 400 degree oven for about 30 minutes, basting often.
