Title: Broiled Salmon with Garlic, Black Pepper, and Ginger

4 | tb | Fresh ginger, peeled and |
Minced | ||
2 | tb | Garlic, minced |
2 | ts | Fresh medium ground pepper |
2 | tb | Dijon mustard |
8 | 4-oz salmon filets |
Mix all ingredients (except salmon) into a bowl to make a rough paste. Add a bit more mustard if necessary. Put salmon on foil- lined baking sheet. Coat top of salmon with a layer of paste.
Broil on one side only 5-7 min. May be served hot or cold with slice of lemon and ALDERBROOK DRY CREEK VALLEY ZINFANDEL.
