Title: Salmon Loaf #2
Categories: Diabetic Shell Salmon
Yield: 4 Servings

  Nonstick vegetable cooking
  Spray
1cnSalmon; undrained (15
1/2 -oz)
2 Eggs; beaten
2cSoft bread cubes; or 1/3
 cBread
  Crumbs
2tbFresh chopped parsley
1/8tsPepper
1smOnion; chopped
2tbLemon juice

Preheat oven to 350 degrees. Generously spray an 8&1/2- by 2&1/2-inch loaf pan with vegetable spray.

In a large bowl, flake salmon, removing bones and skin. Add all remaining ingredients and mix well.

Press into loaf pan. Bake for 50 to 60 minutes or until golden brown and toothpick comes out clean.

Let stand 5 minutes. Loosen edges and lift out of pan onto serving platter. Cut into 4 slices.

4 servings/Serving size: 1 slice
