Title: Atole in Various Flavors

1/2cFresh masa OR a scant 1/2 c masa harina mixed with 1/4 c tap
1 3/4cWater
2cMilk
3 1/3ozTablet of Mexican chocolate chopped
2 1/2ozPiloncillo chopped OR 1/3 c packed brown sugar plus 1/2 Tbl
20 Aniseed, crushed

THE BASE: Pour 1 3/4 cup of water into a blender, add the masa (or masa harina mixture), blend until smooth, then pour into a saucepan. THE ATOLE: Add the milk, chocolate, piloncillo (or brown sugar and molasses), and optional crushed aniseed. Bring to a simmer, whisking, constantly, then simmer over medium-low heat, whisking frequently, until the chocolate and piloncillo are completely dissolved, about 5 minutes. Strain, if you you wish, then serve in cups or mugs Variations. Added 3/17/97 Nut flavored Atole.... Prepare the Basic recipe ****BUT**** A. Replace the chocolate with 1/2 cup of ground nuts. Almonds, Pecans or Walnuts all work well. Add the nuts with the masai. B. Add 1/2 teaspoon of cinnamon to the simmering pot, if you are going to add almond or vanilla extract, take them off from the fire first. More sugar usually helps. Pineapple flavored Atole.... Prepare the basic recipe ***BUT*** A. Omit the chocolate and aniseed. B. Reduce the water to 1 1/2 cups. Blend the masa with the pineapple chunks until blended well. C. Replace the milk with 1 1/2 cups of water and increase the sugar.. Strawberry flavored Atole.... Prepare the basic recipe ***BUT*** A. Reduce the water to 1 1/2 cups. Blend 1 1/2 cups of strained or finely chopped strawberries with the masa. B. Reduce the milk to 1 1/2 cups. C. Omit the chocolate and the aniseed.. D. Use granulated sugar rather than piloncillo.
