Title: Boston Cream (Green and Gold)

2 | c | Sugar |
4 | c | Water |
1 | oz | Tartaric acid |
1 | ts | Essence of lemon |
1 | Egg; white only |
Boil the water, then add sugar and stir until dissolved. When cold add acid and essence of lemon and white of egg beaten stiffly. Bottle and store until required.
To serve: put a small quantity in a glass, add chilled water and stir in 1/4 ts of bicarbonate of soda (baking soda).
