Title: Caramel Eggnog

1/2cSugar
1cMilk; warm, 120 F
6 Eggs; separated
1/2tsExtract, vanilla
1/4tsNutmeg, ground
2cMilk
2tbSugar
2cCream, whipping
OPTIONAL
  Nutmeg, ground

Sprinkle sugar in heavy saucepan; place over medium heat. Cook, stirring constantly, until sugar melts and syrup is light golden brown. Slowly add 1 c warm milk, stirring until caramel dissolves. (Caramel will harden and then melt.) Remove mixture from heat; cover and chill.

Beat egg yolks until thick and lemon colored; add vanilla and nutmeg. Slowly stir caramel mixture and milk into yolk mixture; cover and chill 2 hours.

Beat egg whites at room temperature at high speed of electric mixer until soft peaks form. Gradually add sugar, beating until firm peaks form. Beat whipping cream until soft peaks form. Fold egg whites and whipped cream into chilled mixture. Sprinkle with nutmeg, if desired. Makes 1 cup per serving.
