Title: Passion Fruit Cheesecake

Crust: | ||
1 1/3 | c | Flour |
5 | tb | Sugar |
8 | oz | Butter, melted |
Filling: | ||
1 | lb | Cream cheese |
1 1/3 | c | Sugar |
2 | tb | Plus 2 tsp. cornstarch |
2 | Eggs | |
1/2 | ts | Vanilla |
1/2 | c | Sour cream |
1/2 | c | Passion fruit puree |
Combine all crust ingredients and press into bottom of 9 inch springform pan. bake 350 8 to 10 minutes or golden. cool. make filling: Cut fresh passion fruits in half and scoop out pulp. ( may also be purchased as a frozen puree in some gourmet stores.) Sieve mixture in a stainer to separate seeds and pulp. Beat cheese and sugar till smooth. Blend in eggs and cornstarch. Blend in sour cream, vanilla nd passion fruit puree.Strain entire cheese mixture before placing in crust. bake in a 275 oven for 1 to 1 1/2 hours or set in center.Cool and chill at least 2 hours before serving. Serve with a sauce make from any remaining passion fruit puree mixed with a little rum and sugar to taste. use passion fruit seeds for garnish if desired.
