Title: Ambrosia Pacific Rim Chocolate Chip Cookies

AMERICAN MEASUREMENTS | ||
1 | c | Butter or margarine |
3/4 | c | Packed brown sugar |
1/2 | c | Granulated sugar |
2 | ts | Vanilla |
1 | Egg | |
2 1/4 | c | Unbleached flour |
1/2 | ts | Salt |
1 | ts | Baking soda |
8 | oz | Semi-sweet choc chips |
4 | oz | Roasted macadamia nuts chopped |
4 | oz | Finely shredded coconut |
Preheat oven to 375 degrees F.
In a small mixing bowl, stir together flour, baking soda and salt. Set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy. Add vanilla and egg. Beat well. Add dry ingredients to creamed mixture. Mix well. Add chocolate chips, macadamia nuts and coconut. Mix well.
Roll a heaping tablespoon of dough into a ball. Place each ball 2-inches apart on an un-greased cookie sheet. Bake in preheated oven for 10 to 15 minutes. Remove from oven and place cookies on a cooling rack.
Makes about 3 dozen cookies
