Title: Apple Johnnycakes

APPLES
2tbMaple syrup
1tsButter; melted
2lgApples; peeled, cored, & cut into 1/4" slices
BATTER
3/4cCorn meal
3/4cFlour
1tsBaking powder
1/2tsSalt
1/4tsBaking soda
1cButtermilk
1lgEggs; lightly beaten
1/4cMaple syrup
1tbButter
1tbOil

Preheat oven to 375 degrees F. Heat maple syrup and butter in heavy 10" ovenproof skillet over medium-high heat. Add apples and saute for about 5 minutes, or until slightly softened.

Remove from heat. Using two spoons, arrange slices, fanning them out from center of skillet. In medium mixing bowl, stir together cornmeal, flour, baking powder, salt and baking soda.

In small mixing bowl, beat together buttermilk, eggs, maple syrup, melted butter and oil. Make well in center of dry ingredients and pour in buttermilk mixture. Stir with wooden spoon until just combined. Spread batter evenly over apples and bake 30-35 minutes, or until toothpick inserted into center comes out clean. Invert onto platter, cut into wedges and serve immediately, topped with more syrup.

Nutrition information: 197 calories per serving: 5 grams fat, 33 mg cholesterol, 263 mg sodium. 23% of calories are from fat.

Sylvia's comments: only for corn meal lovers! I dislike it, and the corn meal taste kept me from enjoying it. The kids and my husband liked it, though.
