Title: Applesauce Christmas Cake

1 3/4 | c | Sugar |
1 | Egg | |
1 1/2 | c | Applesauce |
1 | ts | Soda |
2 1/2 | c | Flour, all-purpose |
1 | ts | Baking powder |
3/4 | ts | Salt |
2 | ts | Cinnamon, ground |
1 | ts | Cloves, ground |
2 | ts | Nutmeg, ground |
2 | tb | Molasses |
1 | ts | Vanilla extract |
1 | c | Raisins |
1/4 | c | Walnuts, chopped |
FROSTING | ||
1 | tb | Milk |
4 | tb | Butter (or marg.) |
1 1/2 | c | Sugar, powdered |
1/4 | c | Walnuts, chopped |
3/4 | ts | Vanilla extract |
Cream shortening and sugar until light and fluffy. Beat in egg. Combine applesauce and soda; beat into creamed mixture. Combine flour, baking powder, salt, and spices; add to applesauce mixture. Stir in molasses, vanilla, raisins, and walnuts.
Line the bottom of a 10" tube pan with waxed paper; grease and flour sides of pan. Spoon batter into pan. Bake at 350 degrees for 50 to 60 minutes.
Let cool in pan 10 minutes; then remove cake from pan. When completely cool, spread top of cake with frosting.
Frosting: Heat milk and butter in a saucepan until hot, but not boiling. Beat in sugar. Stir in walnuts and vanilla. Yield: about 1 cup.
