Title: Applesauce Coffee Buns

2 | c | Flour |
1/4 | c | Sugar |
1 1/4 | tb | Baking powder |
1/4 | ts | ;salt |
1 | lg | Eggs |
1 | c | Buttermilk |
1/2 | c | Butter; melted & cooled slightly (1 stick) |
1 1/2 | ts | Extract, vanilla |
1/4 | c | Applesauce, unsweetened |
TOPPING | ||
3 | tb | Honey; melted |
1/4 | c | Almonds, chopped; (1 oz) |
Preheat oven to 375 degrees. Line 8 standard size muffin-pan cups with paper liners.
Mix together flour, sugar, baking powder, and salt.
In a small bowl, whisk together egg, buttermilk, butter, and vanilla. Stir egg mixture into flour mixture just until dry ingredients are moistened.
Spoon batter into prepared pan, filling cups two-thirds full. Spoon 1 heaping teaspoon of applesauce into each bun center.
Bake buns until golden brown, 25 to 30 minutes. Brush melted honey over hot buns. Sprinkle with nuts. Transfer pan to a wire rack to cool slightly. Turn buns out onto a rack.
Baking Tips: Orange marmalade can be used in place of applesauce.
