Title: Baked Lemon Cheese Pie (Aha)

1 | c | Graham cracker crumbs |
1 | ts | Grated lemon peel |
1 1/3 | c | Low-fat cottage cheese, |
Drained | ||
2/3 | c | Yogurt Cheese (AHA) |
Egg substitute equivalent to | ||
2 | Eggs | |
1/2 | c | Sugar |
1/3 | c | Skim milk |
3 | tb | All-purpose flour |
5 | tb | Fresh lemon juice |
1 | tb | Grated lemon rind |
1/4 | ts | Vanilla |
Preheat oven to 300 F.
In a bowl, combine margarine, graham cracker crumbs, and lemon peel. Stir until thoroughly blended. Remove 1 T of mixture and set aside. Press remainder into a 9-inch pie pan. Bake 5 minutes. Remove from oven and allow to cool. Leave oven setting at 300 F.
Blend cottage cheese and Yogurt Cheese (AHA) in a blender or the work bowl of a food processor fitted with a metal blade until creamy. Add egg substitute slowly, mixing constantly. Add sugar and skim milk, beating well after each addition. Add remaining ingredients, beating until smooth.
Pour mixture into cooled pie shell. Sprinkle reserved crumbs on top. Bake at 300 F for 1 1/2 hours, or until set. Cover and refrigerate. Cool several hours before serving.
