Title: Blueberry-Lime Jam

1 | tb | Grated lime rind |
1/2 | c | Fresh lime juice |
7 | c | Sugar |
2 | Pouches Certo liquid fruit | |

To prepare fruit, crush blueberries with a potato masher. Measure 41/2 cups into a large saucepan. Add lime rind, lime juice and sugar, mixing well. Bring to boil, stirring until sugar is dissolved, then bring mixture to a full rolling boil. Boil hard for one minute. Remove from heat and stir in liquid pectin, stirring a few minutes to cool slightly. Carefully ladle into hot, sterilized jars, leaving ¬-inch headspace. Cover with a very thin layer of melted paraffin. Let stand overnight or until set. Cover with another thin layer of paraffin, rotating jar to seal completely. Makes about five (12-ounce) jars.
