Title: Chicken and Fruit Salad

3 | c | Chicken; cooked, diced |
1 | c | Celery; sliced |
2 | tb | Green onion; chopped |
2 | tb | Capers |
1 | ts | Salt |
2 | tb | Lemon juice |
8 1/4 | oz | Pineapple tidbits; drained |
11 | oz | Mandarin orange sections; drained |
1/2 | c | Almonds, slivered; toasted |
1/2 | c | Mayonnaise |
1/2 | ts | Lemon peel; grated |
Salad greens |
Combine chicken, celery, green onion, capers, salt, and lemon juice. Cover and chill for several hours. Just before serving, add pineapple, orange sections (reserve a few for garnish), and almonds.
Combine mayonnaise and lemon peel; carefully fold into chicken mixture. Spoon into a bowl lined with salad greens. Garnish with reserved orange sections.
