1 1/2 | c | Shortening |
8 | tb | Margarine |
2 | | Sticks butter |
3 | c | Light brown sugar |
3 | c | White sugar |
6 | | Eggs |
4 1/2 | c | Flour |
1 | tb | Baking soda |
1 | tb | Salt |
9 3/4 | c | Rolled oats |
1 | tb | Vanilla |
1 1/2 | c | Chopped walnuts |
2 | c | Chocolate chips |
Beat shortening, butter and margarine together until fluffy. Cream in the
two sugars. Beat in the eggs. Sift the dry ingredients into the mixture and
mix well. Stir in the oats, vanilla, nuts and chips. Knead dough for 1
minute. Divide into three equal portions on 3 sheets of foil. Shape each
portion into a bar two inches in diameter.Fold foil around bar and double
wrap if necesary. Freeze until needed. To bake 3 dozen cookies, remove one
bar from freezer and cut into 1/4 inch slices. Place slices 1 inch apart on
a greased baking sheet and bake 375 for 10 to 12 minutes or golden.
Transfer with spatula to rack to cool.
