Chocolate Mint Sandwich Spritz Cookies
1 recipe of Bobby Beers' Spritz cookies, EXCEPT OMIT the almond extract and ADD: 1/2 c cocoa powder 3 Tbs margarine 1 tsp mint extract Chocolate and mint sprinkles (optional) ICING: 1 c powdered sugar 1 Tbs milk 1 tsp mint extract green food coloring
Make the cookie dough, adding the margarine when the margarine is creamed, adding the mint extract instead of the almond extract, and adding the cocoa powder with the flour. Make the cookies with a round solid shape. Top with the chocolate and mint sprinkles, if desired. Bake as directed (8 to 10 minutes at 400 degrees) and let cool.
Icing: Sift the powdered sugar, and add the mint extract. Add the milk a little at a time. You want the result to be a VERY thick frosting. Add green food coloring and stir until blended.
When the cookies are completely cool, spread a small amount on the back of one cookie. (I use the back of a teaspoon to do the spreading.) Top with another cookie, and twist them together and press. This makes them stick together better. (But don't press too hard, or you'll squeeze the icing out!)
Makes 6 dozen cookies.
