Melt the chocolate with 1 tsp of the kirsch in a bowl over a pan of simmering water. Dip the strawberries in the chocolate, holding them by their stalks. Cover entirely with chocolate. Stand on silicone paper to set, then snip off the stalks. In a bowl set over iced water, whip the cream with the sugars, vanilla and the kirsch until doubled in volume. Peel and core the pineapple slices. Put each slice on a plate, spoon the cream into the centers and the strawberries on top.
