1 | lb | Butter |
1 1/4 | lb | Flour |
1 | lb | Sugar, brown |
2 | lb | Raisins, stoned |
2 | lb | Sultanas |
2 | lb | Currants |
10 | Eggs | |
130 | ml | Rosewater |
130 | ml | Brandy |
1/4 | lb | Almonds, blanched |
1 | pk | Mixed spice |
Treacle |
Beat the eggs well, cream the butter and the sugar and mix well together, then add the fruits, spice and flavourings, and lastly add the sifted flour; scoop some of the mixture from centre to the sides of tin, it will keep the cake from cracking.
Bake in well-greased papered tin in a moderate oven for about three hours, mor or less; depends on the size of the cake.
