Title: Chunky Apple and Mincemeat Sponge Pudding

4 | oz | Softened butter |
4 | oz | Caster sugar |
5 | oz | Self raising flour |

2 | lg | Eggs |
1 | md | Bramley apple cored & |
Chopped | ||
5 | tb | Mincemeat |
1/2 | Lemon, grated zest |
Put butter, sugar, flour, salt & zest in large bowl, break in the eggs, whisk the lot 4 mins with electric beater to give a soft creamy mixture.
Fold in apple chunks. Spoon the mincemeat into the bottom of the well greased 1 litre pudding bowl, then pile all the pudding mixture on top & level it off with the back of a spoon. Now take a double square of foil, butter it. Make a pleat in the centre and tie it over the bowl as usual.
Place pudding in a steamer fitted over a saucepan of boiling water and steam 1 1/2 hours. Check water level halfway through cooking. Serve pudding hot with lots of custard. Recipe Delia Smith MMed IMH Georges' Home BBS 2:323/4.4
