Title: Cindy's Low-Fat Fruit Cake (1994 Version)

2 1/2 | c | Dried apples, cut up small |
2 1/4 | c | Mixed dried fruit cut up |

1 1/2 | ts | Nutmeg |
3/4 | ts | Ground cloves |
3 | ts | Cinnamon |
1 1/2 | ts | Nutmeg |
5 1/4 | c | Hot water |
1 | c | Molasses |
1/2 | c | Honey |
4 1/2 | c | Whole wheat pastry flour |
3 | ts | Baking soda |
1 1/2 | c | Oat bran |
Put water, fruit and spices into a large microwaveable bowl. Cover and heat on high for 10 minutes. Remove and stir in molasses and honey. Cool.
Mix flour, bran and soda, (and walnuts if using).
Combine fruit and flour mixtures. Stir until completely mixed.
Pour into three non-stick loaf pans. Bake at 325 till done (a toothpick comes out clean). It took mine about 55 minutes.
Note: Store in refrigerator. If it gets dry, moisten with orange or other
