Pour about 1/4 cup of coconut in a small bowl and use food coloring to tint it light green, making it resemble shredded lettuce. Set aside. For each "hamburger" you want to make, you'll need 2 unbroken Nilla wafers to use for the top and bottom of each "bun". Count out the total number you'll need and seperate them into a "top" pile and a "bottom" pile. For each hamburger, spread 1/4 teaspoon of vanilla frosting on the flat side of one Nilla "bottom". Press some tinted coconut into the frosting. Put another little dab of frosting ("mayonaise") on the top, than press on a chocolate-covered mint cookie flat side down for the "meat patty". Grab a bun "top" and spread 1/2 teaspoon frosting on the flat side. Place this, frosting side down, on top of the "meat patty." Press down gently to make it look like the "mayonaise" is oozing out. Brush the top of the bun with warmed honey, then sprinkle with sesame seeds. Repeat to make as many "hamburgers" as you need. Now if we had a "fry" recipe we would be all set!! :)
