Title: Country Oat Cake

1 | pk | Spice cake mix (18.5 oz.) |
1 | c | Quaker Oats, uncooked - (quick or old-fashioned) |
8 | oz | Plain low-fat yogurt |
3 | Eggs; OR... | |
3/4 | c | -Egg substitute |
1/4 | c | Vegetable oil |
1/4 | c | Water |
1 1/2 | c | Finely chopped apple - (about 2 medium) |
TOPPING | ||
1 | c | Quaker Oats, uncooked - (quick or old-fashioned) |
1/2 | c | Brown sugar, firmly packed |
1/4 | c | Margarine or butter; melted |
1/2 | ts | Ground cinnamon |
Whipped cream (optional) |
Heat oven to 350 F. Grease and flour 13 x 9-inch baking pan. For cake, combine first six ingredients. Blend on low speed of electric mixer until moistened; mix at medium speed 2 minutes. Stir in apple. Pour into prepared pan. For topping, combine oats, brown sugar, margarine and cinnamon; mix well. Sprinkle evenly over batter. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Serve with whipped cream, if desired.
