Title: Feathery Fudge (With Mocha Frosting) Cake

Yield: 1 Servings

2/3cButter or margerine
  (butter preferred)
1 3/4cSugar
2 Eggs
1tsVanilla
2 1/2cSifted flour
2 1/2oz(squares) unsweetened
  Chocolate, melted
1 1/4tsBaking soda
1/2tsSalt
1 1/4cIce water

Cream together butter, eggs and vanilla until fluffy (5 minutes at high speed on mixer or 5 minutes by hand). Blend in cooled melted chocolate. Sift together flour, baking soda, and salt, add to creamed mixture alternately with ice water, beginning and ending with flour, beating well after each addition. Bake in two paper lined 9 x 1 1/2 inch round pans in a 350 degree F oven, for 30-35 minutes or until it looks done. Cool cakes, then frost with frosting made from below recipe. makes 1 two layer cake.
