Title: Ff Gingerbread

1/2 | c | Honey |
1/2 | c | Molasses |
5 | tb | Cooked, mashed sweet potato |
Or winter squash | ||
1 | Egg white | |
1/2 | c | Nonfat yogurt, plain or |
Vanilla | ||
1 | c | Whole wheat flour |
1 | c | Unbleached white flour |
1 1/2 | ts | Baking soda |
1/4 | ts | Salt |
2 | ts | Ginger (more to taste) |
1 | ts | Cinnamon |
1 | ts | Dry mustard |
1/2 | ts | Allspice |
1/4 | ts | Nutmeg |
Recipe adapted from the Enchanted Broccoli Forest by Mollie Katzen and an earlier post
Beat honey and molasses 5 minutes. Add yogurt, egg white and sweet potato and beat until well mixed.
Combine dry ingredients and mix well.
Add wet to dry and mix thoroughly but minimally.
Pour into a square pan or round cake pan sprayed lightly with Pam. Bake in a 350 F oven, 30 minutes or until knife/toothpick inserted in center comes out clean. Start watching it early - when it starts to brown it's probably becoming overcooked.
We like to break it up in pieces in a bowl, warm it a bit in the microwave, pour on some maple syrup and milk and eat it like cereal.
