Title: Fluffy Gingerbread

Yield: 1 Servings

2cFlour, Sifted
1 1/2tsBaking Soda
1/2tsSalt
2tsGinger
1/2tsCloves
1/2cButter Or Other Shortening
1/2cBrown Sugar -- Firmly
  Packed
3/4cMolasses
1cBoiling Water
2 Eggs -- Well-Beaten

Sift the flour once and measure, add baking soda, salt and spices and sift together three times. Work butter with spoon until creamy, add sugar, gradually, beating after each addition, until light and fluffy then add eggs. Add 1/4 of the flour and blend, then the molasses and beat until smooth. Add remaining flour and beat well. Add boiling water and stir until blended. Turn into greased loaf pan and bake in moderate oven (350 F) for 45 mins. Serve hot. Originally submitted by Mrs. T. C.
