Title: Fresh Apple Coffee Cake

1/2 | c | Butter or margarine, softened |
2 | c | Sugar |
4 | Eggs | |
2 | c | All-purpose flour |
2 | ts | Baking powder |
1/2 | ts | Salt |
5 | c | Peeled and chopped apple (about 4 large Granny Smith or Jona |
1 | ts | Vanilla extract |
1 1/2 | tb | Sugar |
1/2 | ts | Ground cinnamon |
Beat the butter at medium speed with an electric mixer. Gradually add 2 cups of sugar; beat well. Add the eggs, one at a time, beating after each addition.
Combine the flour, baking powder and salt; add to the creamed mixture. Stir in the apple and vanilla. Spoon the batter into a greased and floured 13 x 9 x 2-inch pan.
Combine the 1 1/2 tablespoons of sugar and the cinnamon; sprinkle over the cake batter. Bake at 350F for 45 minutes or until a wooden pick inserted into the center comes out clean. Serve warm or cold.
Makes 15 servings.
