Title: Fresh Apple Nut Cake with Caramel Icing

3 | c | Sifted flour |
1 | ts | Baking powder |
1 | ts | Salt |
1 | ts | Baking soda |
1 | ts | Cinnamon |
3/4 | c | Oil |
4 | c | Apples, finely chopped |
(about 6) | ||
1 | ts | Vanilla |
2 | Eggs | |
2 | c | Sugar |
1 | c | Pecans, finely chopped |
Caramel Icing: | ||
2 1/2 | c | Sugar |
3/4 | c | Milk |
1 | Egg | |
1/2 | c | Sugar |
1/2 | Stick butter | |
1 | ts | Vanilla |
Preheat oven to 350 degrees. In a lg mixing bowl, sift flour, baking powder, soda, salt, & cinnamon. Add oil, apples & vanilla. Beat at md speed for 2 min. until well blended. In another bowl, beat eggs until light yellow in color. Gradually add sugar & continue beating until light & fluffy. Fold egg mixture into the apple mixture, blending thoroughly. Stir in nuts. Pour into lightly greased 10" tube pan. Bake at 350 degrees for 1 hr. & 10 min. or until done.
Caramel Icing:
MIx 2 c sugar, milk & egg & bring to a boil. Brown 1/2 c sugar in skillet, then add it to egg mixture while boiling. Boil until cool, then add a little butter & vanilla. Cool & spread over cake. From: Mark Barnett Date: 04 Feb 94
