Title: Applesauce Rye Muffins

1 1/2 | c | Whole wheat flour |
1 1/2 | c | Applesauce |
3/4 | c | Rye flour |
1/8 | c | Lightly packed brown sugar |
2 | ts | Baking powder |
1 | Egg | |
1 | ts | Cinnamon |
2 | tb | Oil |
1/2 | ts | Baking soda |
3 | oz | Dried fruit, diced |
Preheat oven to 375.
In medium mixing bowl combine flours, baking powder, cinnamon, and baking soda; stir well.
Using a wire whisk, in separate medium mixing bowl beat together applesauce, sugar, egg, and oil; stir into flour mixture along with dried fruit, combining thoroughly.
Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out dry.
*** Note: if final batter is too dry, add extra liquid ***
