2 | lb | Plums |
2 | lb | Cooking apples * |
2 | lb | Tomatoes |
2 | lb | Onions |
1 | lb | Sultanas |
1/2 | ts | Mace |
1/2 | ts | Cayenne or chili powder |
1/2 | ts | Mixed spices |
1 | oz | Salt |
2 | oz | Root ginger |
2 | Garlic cloves | |
1 | lb | Demarara sugar(brown) |
2 | c | Spiced vinegar |
Hi Helen, Here's a recipe that is perfect for this time of the year, somewhat like Branston's and very easy to do.
* peeled and cored Chop all the fruit and vegetables. Add spices etc. Boil in the vinegar until tender. Add the sugar and continue cooking until thick. Pack into jars and seal.
You can adapt the fruit and spices to taste and of course double or triple the ingredients if you have loads of stuff to use up. Above makes about 10 jars. One of our neighbours has a giant pear tree and we often put a load of these in with the above.
