Title: Dried Mushroom Oil (Warm Infusion Method)

Yield: 1 Batch

1 Ounce dried mushrooms
1 Cup olive oil

Mushroom oil can be made from packaged dried mushrooms such as porcini and shiitake. Mushroom hunters can dry their less than perfect specimens and use them for oil.

: Chop mushrooms in a food processor until fine. Place in a pot with oil and heat until mixture begins to bubble. : Let cook 10 to 15 seconds and remove from heat. Swirl until just warm. Strain into a bowl through 4 layers of : cheese cloth. : Squeeze well to extract as much oil as possible. Pour into a sterilized jar or bottle, seal tightly, refrigerate, and : use within 1 week for best flavor.

: While this recipe is for four, it can easily serve 8 as a light side with this kind of meal or be doubled up for large : helpings.

Makes about 3/4 cups of oil
