Title: Green Tomato Chutney (English)

4lbGreen tomatoes
1lbApples
1lbOnions
2ozSalt
1lbMoist brown sugar
1ptMalt vinegar
1tsLevel mixed spice
1tsLevel dry mustard
1tsLevel ground ginger
1tsLevel cayenne pepper

Finely chop the tomatoes, apples and onions. Place in a bowl, sprinkle with salt, cover and leave overnight. Next day, strain off the malt vinegar. Place all the ingredients together in a large saucepan, bring to the boil and simmer for 1 to 2 hours, stirring occasionally, until the chutney is thick. Leave in the pan to cool. When cold put into jars, cover and seal.
