Title: Loquat Freezer Preserves

Yield: 1 Recipe
2 1/4 | c | Prepared firm, ripe loquats |
2 | tb | Fresh lemon juice |
5 | c | Sugar |
1 | Pkg powdered fruit pectin | |
3/4 | c | ;water |
Remove loquat seeds; peel fruit. Finely chop by hand or in blender, but do not puree. Stir lemon juice into loquats. Let rest 5 minutes. Add sugar, stir well and let rest 10 minutes.
Bring pectin and water to a boil in a small saucepan. Boil 1 minute. Add loquats and stir constantly 3 minutes. Spoon quickly into hot, clean freezer containers or canning jars, one at a time, and secure lids. Let sit at room temperature 24 hours, then move to freezer. Will keep in the freezer 6 months or in frig 3 weeks.
