Title: Thai Fish Sauce

2 | oz | Can anchovies, drained |
2 | Garlic clove(s) | |
Lightly crushed | ||
1/2 | ts | Dark brown sugar, packed |
1/4 | ts | Salt |
1 1/4 | c | Water |
Place anchovies, garlic, brown sugar, salt and water in a small saucepan. Simmer over medium-low heat for 10 min without stirring.
Remove from heat, cool slightly, then strain through a double layer of cheesecloth. Store covered in the refrigerator for up to 2 weeks.
