Title: Hot Turkish Doughnuts [Loukma]

: 1/2 ts Yeast, dry | ||
: 1 ts Sugar | ||
: 50 ml Water, | ||
: -warm. | ||
: 1 c Flour, plain | ||
: 3/4 ts Salt | ||
: 150 ml Milk | ||
: 100 ml Water, | ||
: | -warm, approximately, | |
: | -extra. | |
: | Oil, for deep frying | |
: | Sugar, castor, | |
: | -mixed with a little | |
: | Cinnamon. |
Mix together the yeast, sugar and water until frothy.
Combine the yeast mixture with the flour, salt, milk and extra water until it makes a smooth batter. Set aside in a warm place for 1 hour to prove/rise and thicken. Stir again.
Heat the oil in a deep fryer or wok until it reaches 170-180^C. Drop teaspoonfuls of the mixture into the oil, rolling them to ensure even cooking.
When golden, remove from the pan and sprinkle with castor sugar and cinnamon. Serves 6 to 8.
