8 | oz | Plain flour |
2 | oz | Chopped mixed fruit peels |
1 | ts | Baking powder |
1 | ts | Ground mixed spices |
2 | tb | Milk |
2 | | Eggs |
1/2 | | Orange rind, grated |
10 | oz | Mixed dried fruit |
5 | oz | Castor sugar |
5 | oz | Butter or margarine |
Place all ingredients in a mixing bowl and beat with a wooden spoon for
about 3 minutes, until well blended. Turn into a greased and lined 7 inch
cake tin and bake in a cool oven (300F; gas mark 2; 150C) for about 1 3/4
hours, or until a fine skewer inserted comes out clean.Leave in tin for 5
minutes and then turn out on a wire rack, strip off the lining paper and
cool.
