Title: Lemon Ice Cream Pie

1 1/2ptIce cream, vanilla
3 Eggs
1/2cSugar
1/2tsSalt
1/4cLemon juice
1cWhipping cream, whipped
  Lemon rind; grated (opt.)
  Mint leaves; (opt.)

Cut ice cream into 1/2" slices, and arrange on bottom and sides of a lightly greased 9" piepan. Let ice cream soften slightly; then smooth slices together with a spoon, formin g pie shell. Freeze 2-1/2 hours or until firm.
