Title: Mama's Thrifty Cream Pie
Categories: Dessert Pie
Yield: 1 9 inch pie

1 1/2cMilk
1/4cSugar
1/4tsSalt
3tbFlour
1 Egg yolk
1tbButter
1/2tsVanilla
1 Baked pastry shell
1 Recipe whipped topping

Scald 1 cup milk over boiling water. Mix sugar, salt, flour and remaining milk together. Stir into hot milk and cook slowly until thicckened, stirring constantly. Cover and cook over boiling water for 5 minutes. Add mixture slowly to egg yolk and cook 1 minute longer. Add butter and vanilla. Cool. Pour into pastry shell and spread with whipped cream topping.

VARIATIONS: Banana: Use 4 ripe bananas. Fill pastry shell with alternate layers of sliced bananas and cooled filling.

Coconut: Stir 1 1/2 cups moist shredded coconut into filling.

Fruit: Stir 1 1/2 cups crained can fruit salad and a few slices of banana into the filling.

Raspberry: Add 1 cup raspberries to the cooled filling.

Strawberry: Cover filling with sliced, sweetened strawberries and spread with whipped cream topping.

NOTE: Any crumb pie shell may be used intead of baked pastry shell.
