TO MAKE DRESSING: Mix honey and juice in mixing bowl.
TO MAKE SALAD: Using serrated knife, peel oranges and remove peel and white membrane. Cut each orange section, letting it drop into bowl. Squeeze remaining juice into bowl. Seed and peel the melon. Cut into thin wedges or bite-size chunks. Add to oranges. Mix gently. Cover and chill until ready to serve. Ladle into serving bowls. Garnish with orange or lime slices, chopped mint or dab of yogurt.
