Title: Pumpkin Flan with Apple Walnut Syrup

FLAN: | ||
1 | cn | Pumpkin |
1 | c | Evaporated milk |
1 | c | Egg substitute |
1/2 | c | Maple syrup |
1 | tb | Pumpkin pie spice |
SYRUP: | ||
2 | md | Apples, peeled, chopped |
1/2 | c | Maple syrup |
1/4 | c | To 1/2 c walnuts, chopped |
And toasted |
FLAN: In large bowl, combine all ingredients, blend with electric mixer. Coat a 9 inch microwave-safe cake pan (pie pan) with nonstick spray. Pour mixture into prepared pan. Microwave on high for 20 minutes, turning every 5 minutes. (Microwave ovens differ, the flan might be done earlier). Cool in refrigerator.
SYRUP: Place apple pieces, and syrup into microwave safe bowl, cook on high for 5 to 7 minutes. Add toasted walnuts. Cut cooled flan into wedges. Serve warm syrup mixture over cooled flan.
If you don't have a microwave, bake flan at 350 degrees for 40 minutes or until set. Cook sauce for about 20 minutes over low heat.
