Title: Quick and Easy Pear Coffee Cake [America]

1 1/4 | c | Firm packed brown sugar |
1/3 | c | Vegetable oil |
1/2 | ts | Almond extract |
2 | lg | Egg whites |
1 | lg | Egg |
2 | c | All purpose flour |
2 | ts | Baking powder |
1 | ts | Ground cinnamon |
1/2 | ts | Ground nutmeg |
1/8 | ts | Salt |
1/4 | ts | Ground cloves |
1 1/4 | c | Diced fresh pear |
1/4 | c | Dried currants |
Preheat oven to 350F and coat an 8-inch square baking pan with nonstick spray.
Combine brown sugar, oil, extract, egg whites and eggs in a bowl; beat with mixer at low speed until well blended.
Combine flour, baking powder, cinnamon, nutmeg, salt and cloves in a separate bowl; stir well. Gradually add flour mixture to brown sugar mixture; beat until just blended. Stir in pears and currants.
Pour batter into prepared pan and bake at 350F for 40 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes on a wire rack.
