Title: Rum Raisin Stuffed Apples

2 | tb | Dark Rum |
1 | tb | Apple Juice |
3 | tb | Raisins |
1 | ts | Brown Sugar |
1/2 | ts | Vanilla Extract |
1/8 | ts | Cinnamon |
1 | tb | Chopped Pecans |
Core and peel top 1/3 of each apple. Place apples in a microwave safe 2 quart casserole dish and set aside. Combine rum and Apple Juice in a glass 1 cup measure. Cover with Plastic Wrap, turning back one corner to vent. Microwave on high for 45 seconds. Add raisins; cover and let stand for 5 minutes. Stir in Vanilla, Sugar & Cinnamon. Spoon mixture into apple cavities; pouring remaining liquid evenly over apples. Cover with plastic wrap & vent corner. Microwave on high for 5 to 6 minutes or until apples are tender, rotating dish a half turn after 3 minutes. Sprinkle with pecans, and serve these warm.
