Title: Serious Pecan Pan--Bob Bowersox

1 | 9" pie shell, partially baked | |
1/3 | c | Butter, or margarine, melted |
2/3 | c | Brown sugar, packed |
3 | lg | Eggs |
1 | c | Dark corn syrup |
1 1/4 | c | Pecans, broken or chopped slightly |
1 | tb | Rum |
1/2 | ts | Salt |

Bake the empty pie shell in a pre-heated, 450 degree oven. Allow the shell to cool while preparing the filling. Reduce oven temperature to 375 degrees.
In a mixing bowl, cream together the butter and brown sugar. Beat in the eggs, one at a time, until smooth. Stir in the corn syrup, pecans, rum, and salt, blending thoroughly.
Pour into the pie shell, and bake at 375 degrees for 40-45 minutes, or until a knife inserted into the filling comes out clean. Serve warm with vanilla ice cream. Also good served cold, though much chewier.
