Title: Sultana and Raisin Cake

2 | c | Sultanas |
2 | c | Raisins |
2 | tb | Mixed Peel |
200 | g | Butter |
1 1/4 | c | Sugar |
4 | Eggs | |
1 | c | Fresh Breadcrumbs |
1 | ts | Ground Cinnamon |
1/2 | ts | Ground Nutmeg |
2 | c | Flour |
2 | ts | Baking Powder |
1/2 | c | Apple Juice |
Place sultanas, raisins & peel in a saucepan. Cover with water & bring to the boil. Simmer for 8 minutes. Drain well & cool. Cream butter & sugar together. Add eggs one at a time, mixing them in well. Add breadcrumbs, cinnamon & nutmeg. Mix egg mixture & fruit together. Sift in flour & baking powder mixture & add apple juice. Pour into a baking paper-lined 23cm cake tin. Bake at 180C (350F) for 30 minutes then reduce temperature to 150C (300F) for 1 hour.
